
These light, fruity marshmallows are not only delicious but packed with the immune-boosting power of blackcurrants. Perfect for a healthy treat or a stunning addition to your dessert table!
Ingredients
- 1 cup blackcurrant juice (1/2 cup Daily Good NZ Blackcurrant Immunity Shot + 1/2 cup water)
- 2.5 tbsp gelatine powder
- Edible flowers (for garnish)
Method
- Mix 1/2 cup Daily Good NZ Blackcurrant Immunity Shots and 1/2 cup cold water in a saucepan. Sprinkle the gelatine powder over the mixture and let it sit until the gelatine blooms.
- Place the saucepan over low heat and gently stir until the gelatine completely dissolves and the mixture begins to thicken. Remove from heat and let it cool to room temperature.
- Once cooled, whisk the mixture with a handheld whisk until it becomes light and foamy.
- Pour the foamy mixture into a lined silicone mould and refrigerate overnight or until fully set (minimum 4 hours).
- Carefully remove the marshmallows from the mould and garnish with edible flowers before serving.
