Recipe: Immunity Kale Salad with Golden Goodness Dressing

Whip up this immune boosting superfood salad with Kale, and a Daily Good 'Golden Goodness Dressing' with this recipe from our good friend @nourishandflourishsyd

 

Ingredients:


2 cups finely chopped kale leaves (massaged with 1 tbsp olive oil)

1 small orange, diced into bitesize

1 handful cherry tomatoes, cut into quarters

1 recipe Tofu feta

Tofu Feta:

100g silken/ original tofu, diced

1 tbsp nutritional yeast

1 tbsp fresh lemon juice

pinch of salt and pepper

Golden dressing:

2 tbsp Daily Good Turmeric Immunity Shots

1/4 cup Greek yoghurt

1 tsp Extra Virgin Olive Oil

Pinch of salt and pepper

Topping: dried cranberries + pumpkin seeds

 

Method:

Make tofu feta by combining crumbled tofu, nutritional yeast, lemon and salt and pepper. Set aside.

Mix dressing in a jar/ small bowl and set aside. In a big salad bowl mix together salad ingredients with salad dressing.

Top with tofu feta, cranberries and pumpkin seeds.
